Balsamic Vinaigrette is a great, simple, and versatile dressing. Balsamic is a fairly sweet vinegar so it would be a good choice if you are not fond of tart salad dressings. This is my go-to salad dressing if I’m serving Italian style dishes such as homemade pizza, pasta with tomato sauce, or tomato and mozzarella panini.
Eater’s Note: This dressing is enough for a medium to large head of lettuce, so you can adjust your proportions depending on how big of a salad you are making. If you are unsure, make the dressing on the side and add a little bit at time to your salad.
Balsamic Vinaigrette
Ingredients
- 2 - 3 tbsp good balsamic vinegar
- ¼ cup extra virgin olive oil
- sea salt and pepper to taste
- few tbsp of freshly grated parmesan cheese - optional
Instructions
- In the bottom of a large salad bowl, add vinegar, salt and pepper.
- Add olive oil in a slow drizzle while whisking continuously.
- Add cheese once the dressing if combined if you which.
- Add lettuce and chopped veggies and toss to combine.
Notes
The reason you want to add the oil very slowly is to create an emulsion - a thickened liquid. If you add too much at once the oil and vinegar will separate. Not a big deal if it does - it still tastes good either way.
